Biography

Dr. Dallmeyer teaches food service system courses at Bradley University that utilize a laboratory called Lydia’s Late Night Food Service, located in University Residence Hall. Each January, Dr. Dallmeyer teaches a study abroad course in consumer issues in health care. She is certified to teach Food Service Sanitation by the Illinois Department of Public Health, the ServSafe by the National Restaurant Association Educational Foundation, and the TAP Series.

Prior to joining the faculty at Bradley University, Dr. Dallmeyer taught dietetic and hospitality courses for more than twenty-two years at Western Illinois University. She also served as the Associate Director of the Centennial Honors College at Western Illinois University from 2006-2008. Before joining the faculty at WIU, she served as director of the undergraduate dietetic program at the University of Iowa for six years. She has worked as a clinical dietitian at OSF in Peoria; the Indiana University Medical Center in Indianapolis; Barnes Hospital in St. Louis; and Memorial Hospital in Belleville, Illinois. Dr. Dallmeyer sits on the Institutional and Food Service Committee and the Food Security Committee.

Teaching

Dr. Dallmeyer teaches consumer issues in healthcare, food service systems, and dietetics and nutrition and wellness professional practicum courses. She also teaches consumer issues in health care as a Study Abroad course.

Scholarship

Research interests focus upon snacking habits of various populations groups, food service operation, and food safety knowledge and applications by different population groups.

Service

Apart from the departmental and college committees, she serves as treasurer of the International Federation of Home Economics-US chapter and is a reviewer for the International Council of Hotel, Restaurant, and Institutional Education (ICHRIE) organization. She coordinates the laboratory experiences at Lydia's Late Night Food Service with the undergraduate and graduate food service courses.
