Among the family and consumer
sciences courses that Jeannette Davidson teaches are Nutrition,
Advanced Nutrition, Medical Nutrition, and Sports
Nutrition. Her current research centers on interactions involving
food intake, performance, and health, especially in athletes and
the elderly.
Background
Prior to joining the Department of Family and Consumer
Sciences, Dr. Davidson taught at the University of Pretoria, South
Africa, where she was responsible for organizing the Nutrition and
Dietetics Clinic, as well as maintaining a dietetic consulting practice.
Since coming to Bradley University, she has developed a research
focus in the health risks of the elderly in Peoria area; she also
consults with athletes to enhance performance. Dr. Davidson is research
advisor for a project at the University of Potchefstroom, South
Africa, helping to develop a soy-based functional food to enhance
athletic performance.
Dr. Davidson is director of the dietetic program in the department.
She believes in the link between research and teaching and encourages
students to become involved in her research program. Through the
Bradley Student Dietetic Association, students have an opportunity
to serve in community programs and participate in a nutrition clinic.
Degrees & Certification
Dr. Davidson received her PhD in nutrition, nutritional
biochemistry, and exercise physiology from Ohio State University
in 1991. She received her BS and MS from the University of Pretoria,
South Africa; her High School Teaching Certification from the Normal
College, South Africa; and her Internship Certification from the
New York Hospital Cornell Medical Center. She is a registered dietitian
and licensed dietitian, and is certified as a nutrition specialist.
