Martha Dallmeyer joined the Department of
Family and Consumer Sciences in 2008. She teaches Food
Service Systems, Community Nutrition, and the Practicum
in Foods and Nutrition. Her current research centers on food
safety and safe food handling knowledge and practices in different
population groups.
Background
Prior to joining the faculty at Bradley University, Dr. Dallmeyer
taught dietetic and hospitality courses for more than twenty-two
years at Western Illinois University. Since 2006, she has served
also as the Associate Director of the Centennial Honors College
at Western Illinois University. Before joining the faculty
at WIU, she served as director of the undergraduate dietetic program
at the University of Iowa. She has worked as a clinical dietitian
at OSF; the Indiana University Medical Center; Barnes Hospital in
St. Louis; and Memorial Hospital in Belleville, Illinois. Also,
she has been a dietetic consultant for six long term care facilities
and the WIC program for five counties in west central Illinois.
Currently, Dr. Dallmeyer serves as the International Federation
of Home Economists Chair for the Illinois Association of Family
and Consumer Sciences.
Degrees
Dr. Dallmeyer completed her undergraduate degree at the
University of Illinois, her masters degree at Indiana University,
and her Ph.D. at the University of Tennessee in food science and
food systems administration. She completed a dietetic internship
at the Indiana University Medical Center and is a registered dietitian.
